Carrot Cake !


On a rainy day some warm Carrot Cake ! My 2-year-old enjoyed eating it.(If you observe closely the cake has a small missing piece, my the little one sneaked in & treated himself! )

You require :

1 1/2 Cup All Purpose Flour

1 Cup Sugar

1/2 spoon  Baking powder

2 Eggs

1/4 Cup Yogurt

1/4 Cup Olive Oil

1/4 spoon Cardamom

1 Carrot (Grated)

In a bowl mix All Purpose Flour/Sugar/Baking powder. (If you wish can add 2-3 spoon extra sugar if you want cake to be very sweet). Keep aside. In a big bowl beat egg nicely, add yogurt & olive oil and mix well. Slowly start adding first mixture (Flour/Sugar/Baking powder). Stir well and no lumps should be formed. At end add cardamom and grated carrot .(I added medium size carrot, if you like carrots can add more).Grease baking tray and bake at 350 degrees for 30-45 min.

Carrot Cake is ready!
